Happy Thanksgiving from our house to yours! Most of us held very different get togethers than years past. We are still trying to work through (or should I say eat through) the leftovers from Thanksgiving Day. Today I decided to do a Thanksgiving “stack” in an attempt to help empty the refrigerator before trash day.
During the summer Karen made a Spicy Shrimp Stack using a cylinder cut from a plastic soda bottle (pop bottle for my friends back home).
They were delicious and looked so impressive we added a 3×3 dessert mold to our kitchen tool kit. I remember saying that I couldn’t wait for Thanksgiving, “I’m going to make a Thanksgiving Stack!” and today I did.
I just grabbed some of the leftovers: smoked turkey, mashed cauliflower potatoes (caulipots), mashed sweet potatoes, cranberry sauce, apple cranberry stuffing, and gravy, then got started. I heated the potatoes, stuffing and gravy then started working on my “stack”. The order isn’t important, it was more about trying to figure out what would keep it together and provide a good base. I started with the caulipots, then a layer of cranberry sauce. Next the sweet potatoes (check out those pecans) and then added the stuffing. It looked a little dry so I decided to add some gravy to help hold the stuffing together, then topped it off with the turkey and a little more gravy.
