One pan meal for two. This recipe qualifies as a meat and potato dish with little to clean up.
Honey Sriracha Braised Chicken Thighs
Ingredients
Marinade
- 1 tbsp olive oil
- 1 lb boneless skinless chicken thighs
- 1 cloves garlic chopped
- ½ tsp sriracha
- ½ tbsp apple cider vinegar
- ½ tbsp honey
- 1 tbsp sun dried tomatoes
Braise Ingredients
- 2 cups potatoes chopped
- 1 cup carrots chopped
- 1 cup onions chopped
- 1 tsp sriracha
- ½ tsp black pepper
- ½ tsp paprika
- ½ tsp chili powder
- 1 cup chicken broth
- 1 pinch salt
Instructions
- Preheat oven to 375°F
- Place chicken in a glass dish or plastic bag. Combine remaining marinade ingredients. Pour into dish or bag and marinate for 20 minutes.
- Heat olive oil in braising pan over medium heat. Brown chicken for 2 minutes per side. Remove from pan, set aside.
- Add next 7 ingredients to pan. Cook until onions start to soften.
- Place chicken with juices on top of vegetable mixture. Add chicken broth and a pinch of salt, top with desired drizzle of sriracha.
- Cover and bake in oven for 30 minutes. Pray it tastes good.
