One pan meal for two. This recipe qualifies as a meat and potato dish with little to clean up.

Honey Sriracha Braised Chicken Thighs

Ingredients

Marinade

  • 1 tbsp olive oil
  • 1 lb boneless skinless chicken thighs
  • 1 cloves garlic chopped
  • ½ tsp sriracha
  • ½ tbsp apple cider vinegar
  • ½ tbsp honey
  • 1 tbsp sun dried tomatoes

Braise Ingredients

  • 2 cups potatoes chopped
  • 1 cup carrots chopped
  • 1 cup onions chopped
  • 1 tsp sriracha
  • ½ tsp black pepper
  • ½ tsp paprika
  • ½ tsp chili powder
  • 1 cup chicken broth
  • 1 pinch salt

Instructions

  • Preheat oven to 375°F
  • Place chicken in a glass dish or plastic bag. Combine remaining marinade ingredients. Pour into dish or bag and marinate for 20 minutes.
  • Heat olive oil in braising pan over medium heat. Brown chicken for 2 minutes per side. Remove from pan, set aside.
  • Add next 7 ingredients to pan. Cook until onions start to soften.
  • Place chicken with juices on top of vegetable mixture. Add chicken broth and a pinch of salt, top with desired drizzle of sriracha.
  • Cover and bake in oven for 30 minutes. Pray it tastes good.
