I had some avocados that were ripe and needed to be used. Couple that with a craving for salmon and I threw together this salad for tonight’s dinner.
Creamy Garlic Sriracha Salmon Salad
Ingredients
- 1 Tbsp mayonnaise
- 2 Tbsp red wine vinegar
- 1 Tbsp sriracha sauce
- 1 Tbsp Weber Garlic Sriracha seasoning
- ½ tsp garlic powder
- ½ tsp parsley flakes
- ⅓ cup olive oil
- 3 slices applewood bacon cut into 1 inch pieces
- 1 lb salmon steaks
- 1 head romaine lettuce torn
- 2 cups mixed salad greens
- ½ tomato chopped
- 1 red onion thinly sliced
- ¼ red bell pepper chopped
- ½ jalapeno thinly sliced
- 1 avocado sliced
- 1 Tbsp lime juice
- salt & pepper to taste
- ½ cup shredded cheddar jack cheese
Instructions
- Whisk together first 7 ingredients. In a glass pan, marinate salmon steaks with half of the marinade. Reserve the rest for the salad dressing.
- Cook bacon pieces until browned. Remove to paper towek lined plate. Set aside.
- Remove all but 1 Tbsp bacon fat from pan with paper toweling, discard.
- In remaining bacon drippings, cook salmon skin side down for 3 minutes on medium heat. Flip and cook another 3 minutes. Remove to paper toweling. Once cool, remove skin and break into 1 inch pieces.
- Seed and cut avocado into slices. Drizzle with lime juice and season to taste with salt and pepper.
- Begin buildng your salad with lettuce, tomato, red onion, red pepper, jalapeno, & avocado. Place broken salmon pieces on salad. Top with shredded cheese and bacon bits. Drizzle with remaining marinade/dressing.
