So for brunch today, I ventured out on a limb to use a new ingredient that we found at the grocer – Thomas’ Mini Croissants (not a sponsor). I love a buttery croissant and have also devoured English muffins from childhood until now. So why not give these delicate buns a go?
The bag holds quite a few rolls so we are having trouble using them all before the expiration date. I will say that the croissants are more like dinner rolls. Changing up the old hum-drum ingredients with exciting new products helps me to avoid burnout from repetition. We’ve tried making bacon, egg and cheese sliders with them and they turned out delicious. But how else can we consume them without waste?
Looking into the refrigerator, I found some oven roasted chicken breast left from the weekend. Having home cooked meats in the refrigerator to use as a quick meal component is becoming an asset in changing how we eat. There were some greens and onions from one of our many healthy salads, so I created these chicken club sliders. Two sliders per person seemed to be enough to cut cravings and satisfy our hunger.
How would you use these precious little rolls? What original or unusual creation would you make?
Hot Ham and cheese with tomato soup. Or possibly a crunchy chicken salad or egg salad. Wonder if you could season and bake to use as croutons or a breaded topping on a casserole?
