I had some avocados that were ripe and needed to be used. Couple that with a craving for salmon and I threw together this salad for tonight’s dinner.

Creamy Garlic Sriracha Salmon Salad

Ingredients

  • 1 Tbsp mayonnaise
  • 2 Tbsp red wine vinegar
  • 1 Tbsp sriracha sauce
  • 1 Tbsp Weber Garlic Sriracha seasoning
  • ½ tsp garlic powder
  • ½ tsp parsley flakes
  • cup olive oil
  • 3 slices applewood bacon cut into 1 inch pieces
  • 1 lb salmon steaks
  • 1 head romaine lettuce torn
  • 2 cups mixed salad greens
  • ½ tomato chopped
  • 1 red onion thinly sliced
  • ¼ red bell pepper chopped
  • ½ jalapeno thinly sliced
  • 1 avocado sliced
  • 1 Tbsp lime juice
  • salt & pepper to taste
  • ½ cup shredded cheddar jack cheese

Instructions

  • Whisk together first 7 ingredients. In a glass pan, marinate salmon steaks with half of the marinade. Reserve the rest for the salad dressing.
  • Cook bacon pieces until browned. Remove to paper towek lined plate. Set aside.
  • Remove all but 1 Tbsp bacon fat from pan with paper toweling, discard.
  • In remaining bacon drippings, cook salmon skin side down for 3 minutes on medium heat. Flip and cook another 3 minutes. Remove to paper toweling. Once cool, remove skin and break into 1 inch pieces.
  • Seed and cut avocado into slices. Drizzle with lime juice and season to taste with salt and pepper.
  • Begin buildng your salad with lettuce, tomato, red onion, red pepper, jalapeno, & avocado. Place broken salmon pieces on salad. Top with shredded cheese and bacon bits. Drizzle with remaining marinade/dressing.
