Today was one of those hot days. Not outside, but both lunch and dinner included extra heat in my favorite ways.
It started with a lunchtime snack. Karen decided to make something she called Jack Crisps. Very simple, and really delicious. It was basically Monterey Jack Cheese and a Jalapeño. Here is what she did…
She started with a an 8 oz bag of Monterey Jack shredded cheese and a large Jalapeño. Preheated the oven to 350 degrees. Put a piece of parchment paper on a cookie sheet. Took about a tablespoon of shredded cheese at a time, and pressed it into a cookie shape then added a thin slice of the jalapeño. Baked for 10-12 minutes and the result is a great snack! Eat it warm and they are a little chewy, or wait till they cool and they are crunchy. Excellent either way and quick and easy.
For dinner tonight we decided to grill country sausages. We also had some Anaheim Peppers in our Misfits Market box (not a sponsor) this week so added those and some onions and headed to the deck. We made your basic sausage sandwich but it didn’t have the spiciness we both love.
I decided to kick mine up a notch with some ketchup I found when we were in Rhode Island. A favorite product of mine is the Ghost Ketchup from Pepper Palace (not a sponsor). Anytime you want to add ketchup AND heat, this is a go-to option.
